Pumpkin, Not Just for Pie
Everywhere you look is pumpkin spice this or pumpkin spice that. Welcome to October. It’s no surprise our recipe for October features pumpkin.
Pumpkin is a good source of fiber to keep you feeling fuller longer. Pumpkin is also a good source of Vitamin A which can boost your vision. We’re all used to pumpkin as an ingredient in pie, but pumpkin is also a great way to make baked treats a little healthier by substituting pumpkin for the butter and eggs in recipes.
Here’s an easy, three ingredient (yes, only three ingredients) recipe featuring pumpkin that is sure to become a favorite.
Chocolate Chip Pumpkin Spice Cake
1 box of spice cake mix
1 can of 100% pumpkin (not pumpkin pie filling)
1 package of semi-sweet chocolate chips
Preheat oven to 350 degrees. Grease and lightly flour a 13×9 inch baking pan.
Mix the cake mix and the pumpkin together in a large bowl. Fold in chocolate chips. Pour into prepared baking pan. Bake for 23 to 28 minutes until done. Test the center of the cake with a toothpick. If it comes out clean, your cake is done. Cool for 15 minutes on a baking rack.
